Ingredients
1 cup almonds
⅓ cup cacao nibs
⅔ cup chopped medjool dates
4 tablespoons unsweetened shredded coconut, divided
2 tablespoons cocoa or cacao powder (optional)
1 teaspoon vanilla extract
½ teaspoon ground cinnamon
¼ teaspoon ground cardamom
Pinch Himalayan salt
2 tablespoons freshly squeezed orange juice
1 tablespoon pure maple syrup
1 teaspoon grated orange rind

In a food processor, combine almonds, nibs, dates, 2 tablespoons coconut, cacao powder, vanilla, cinnamon, cardamom, and salt. Process until almonds are finely ground (not into powder).

Add orange juice and maple syrup, process until mixture balls up.

Use hand to form into bite-sized balls.

Place remaining shredded coconut in a bowl and mix in grated orange rind. Roll the balls in shredded coconut mixture.

Store in a covered container in fridge.
