Caesar Salad with Spicy Roasted Chickpea Croutons

You won’t miss the original once you taste our vegan version of this Caesar salad. It’s tangy and lip-smacking delicious. Substitute croutons with our Spicy Roasted Chickpeas, and serve with vegetarian chicken slices for a complete meal.

Ingredients

 1 head romaine lettuce, torn
 1 head butter or bibb lettuce, torn
 1 avocado, sliced (replaces the richness of traditional egg slices)
 2 green onions, thinly sliced
 2 tablespoons capers

Instructions

Place the romaine and butter or bibb lettuces in a large salad bowl.

Add the avocado slices, green onions, and capers to the lettuces.

Add the Caesar Dressing and toss gently.

4

Sprinkle with the Spicy Roasted Chickpeas.

Serve with Vegan Parmesan, if desired.
