Cold Brew Lemon Balm

Lemon-Balm-Tea
Lemon balm is digestive and calming.

Ingredients

 2 to 3 sprigs fresh lemon balm (20-25 leaves)
 4 cups cold water

Instructions

Crush the lemon balm to release its scent and place in a quart jar.

Add cold water. Cover and refrigerate for 30 minutes or overnight.

Strain if desired.

Variations: Add fresh lemon or lime slices. Substitute fresh mint for lemon balm.
If using dry lemon balm leaves, add 3 to 4 tablespoons in 32 ounces cool water. Place in the sun for 3 to 4 hours. Strain.

Serves 4
