Ingredients
8 ounces firm tofu, drained
¼ cup chopped green or red bell pepper
2 scallions, sliced
¼ cup shredded carrots
2 tablespoons chopped fresh parsley
¼ cup tahini, at room temperature
¼ teaspoon garlic powder
2 teaspoons lemon juice
1 teaspoon tamari
¼ teaspoon salt
½ teaspoon ground cumin

Mash tofu in a bowl. Add all other ingredients and mix well.
Serves 2
Use this as a sandwich spread on bread or serve it with crackers or vegetable chips
