Xigua Popsicles

What is more refreshing than watermelon on a hot summer day? How about a popsicle? This recipe is super easy--frozen watermelon on a stick. What kid wouldn’t love one of those? Xigua popsicles are inspired by the xigua watermelon from Africa.

Ingredients

1 small watermelon or ½ of a cut watermelon
 Popsicle sticks

Instructions

1

Cut your watermelon into wedges.

2

Slice into 1” thick triangles, leaving the rind on the slices.

3

Cut a small slit in the green rind, about the size of a popsicle stick.

4

Slide the stick into the slit.

5

Lay your “popsicles” on a parchment-lined baking sheet. Continue to layer the popsicles between parchment paper until all of the watermelon popsicle slices are on the baking sheet.

6

Place in your freezer. Serve when frozen.

Note: You can also make popsicles using other melons, like honeydew and cantaloupe.
